Summer Squash Gratin

Ingredients

    Olive Oil
  • 1 small 
    Onions
  • 3 med 
    Summer Squash
  • 2 med 
    Red Tomatoes
  • 3 clove 
    Garlic
  • 1 dash 
    Table Salt
  • 1 dash 
    Black Pepper
  • 1 tbls 
    Thyme
  • 2 oz 
    Gruyere Cheese

Directions

1. Preheat oven to 350 degrees Fahrenheit. Lightly grease an 8" round baking dish with cooking spray.

2. Slice onion into rounds. Slice zucchini and tomatoes about 1/2" thick.

3. In a large skillet over medium heat, add oil and heat. Add onion and garlic. Saute until onion becomes translucent, 5 minutes.

4. Place zucchini slices vertically along the edge of the baking dish, cut edge against side of dish. Place the tomato slices against the zucchini, then some of the sauteed onion-garlic mixture against the tomato slices. Repeat with zucchini, tomato, and onion-garlic mixture to form alternating rings. Place remaining vegetables in center.

5. Sprinkle with salt, pepper, thyme and cheese.

6. Bake for 25 minutes and serve.
